Material
Mango (for mango pulp) – 2 ripe
Milk-1 liter
Sugar-3-4 spoons
Falooda Sev-1/2 cup
Sabja (Chia) seeds-2 spoons
Cardamom powder-1/2 teaspoon
Dry fruits-almonds-pistachios (to decorate)
Method
- First of all, boil the milk in a heavy bottomed vessel on low flame. Keep stirring it continuously so that the milk does not stick to the bottom.
- When the milk is reduced to half, add sugar and cardamom powder to it and mix well. By this process your Rabdi will be ready. Keep it in the refrigerator to cool.
- Now boil the Falooda Sev as per the instructions given on the packet and wash it with cold water and keep it aside. Soak the sabja seeds in water for 10-15 minutes, until they swell.
- After this prepare mango pulp. Peel the ripe mango and blend its pulp in a mixer. If you want, you can also add a little sugar, but if the mangoes are sweet then it will not be needed.
- Take a tall glass and first add 1-2 spoons of sabja seeds in it. Then make a layer of Falooda Sev. Put mango pulp on it and then add cold rabri. Repeat layering in the same manner. Garnish by adding dry fruits on top and if desired, a little mango pulp.
- If you want to make it richer, you can also add one scoop of vanilla ice cream to it. This will make its taste even more amazing.
